Santa Cruz - Highlands Farm

Before lunch we traveled up into the highlands of Santa Cruz where there are many farms growing products for the islands. We visited El Trapiche, which specializes in sugar cane products, along with coffee, and cocoa.

A sugar cane press extracts the sweet juice from the cane. Usually it is driven by a donkey.
Some of the sugar cane juice is processed into sugar and molasses, but a good bit of it is fermented in batches in tanks such as this.
After fermentation, the juice is distilled into an alcoholic spirit of about 40% alcohol.
The sugar cane remnants ("bagasse") are the main fuel for the still, but here the owner threw in a bit of the distilled spirits to demonstrate their strength!
